Strawberry Puff Pastry Tart

Ingredients
- 500g strawberries
- 3 tbsp CSR Monk Fruit Classic
- Zest of a lemon
- 1/2 tsp vanilla extract
- 1 tbsp White Wings plain flour
- 1 sheet Pampas Shortcrust Pastry, thawed
- 1 tbsp melted butter (to coat puff pastry crust)
- 1 tbsp CSR Monk Fruit Classic, for sprinkling
- Vanilla ice cream or yoghurt, to serve
Method
- Wash and cut strawberries into quarters
- Add fruit to a medium bowl with CSR Monk Fruit Classic and lemon zest, gently tossing to combine. Add flour, gently stirring until combined. Set aside
- Preheat the oven to 200°C and line a baking tray with baking paper and set aside
- Spoon the strawberry mixture into the centre of the dough and fold the dough up around the filling
- Brush melted butter lightly over the exposed dough
- Sprinkle with CSR Monk Fruit Classic
- Bake tart for 20-25 minutes, until the crust is golden brown. Let cool for 15 minutes before serving and slicing. Serve with vanilla ice cream or yoghurt.
