Strawberry Puff Pastry Tart

  • 500g strawberries
  • 3 tbsp CSR Monk Fruit Classic
  • Zest of a lemon
  • 1/2 tsp vanilla extract
  • 1 tbsp White Wings plain flour
  • 1 sheet Pampas Shortcrust Pastry, thawed
  • 1 tbsp melted butter (to coat puff pastry crust)
  • 1 tbsp CSR Monk Fruit Classic, for sprinkling
  • Vanilla ice cream or yoghurt, to serve


  1. Wash and cut strawberries into quarters
  2. Add fruit to a medium bowl with CSR Monk Fruit Classic and lemon zest, gently tossing to combine. Add flour, gently stirring until combined. Set aside
  3. Preheat the oven to 200°C and line a baking tray with baking paper and set aside
  4. Spoon the strawberry mixture into the centre of the dough and fold the dough up around the filling
  5. Brush melted butter lightly over the exposed dough
  6. Sprinkle with CSR Monk Fruit Classic
  7. Bake tart for 20-25 minutes, until the crust is golden brown. Let cool for 15 minutes before serving and slicing. Serve with vanilla ice cream or yoghurt.
