Rhubarb Berry Spiced Fruit Bake

Try a healthier dessert option for winter with this Rhubarb Berry Spiced Fruit Bake recipe.
With just half a cup of unrefined coconut sugar, the berries and rhubarb are caramelised as they bake to create a deliciously sweet dessert.
Serve with a a spoonful or Greek yoghurt or coconut yoghurt to finish.
Ingredients
- 1 bunch rhubarb, trimmed and cut into 6cm lengths
- ½ cup CSR Coconut Sugar
- ¼ cup water
- 3 strips orange peel
- 2 fresh bay leaves
- 1 punnet blackberries
- 1 punnet raspberries
- Yoghurt, for serving
Method
- Pre-heat oven to 180°C fan-forced.
- Place rhubarb, sugar, water, peel and bay leaves in a small baking dish. Toss well. Cover with foil and bake for 15 mins.
- Add berries to baking dish, gently toss to combine and return to the oven for a further 5 mins uncovered. Serve warm with yoghurt or chilled on your morning cereal.
