Rhubarb Berry Spiced Fruit Bake

Try a healthier dessert option for winter with this Rhubarb Berry Spiced Fruit Bake recipe.

With just half a cup of unrefined coconut sugar, the berries and rhubarb are caramelised as they bake to create a deliciously sweet dessert.

Serve with a a spoonful or Greek yoghurt or coconut yoghurt to finish.


  • 1 bunch rhubarb, trimmed and cut into 6cm lengths
  • ½ cup CSR Coconut Sugar
  • ¼ cup water
  • 3 strips orange peel
  • 2 fresh bay leaves
  • 1 punnet blackberries
  • 1 punnet raspberries
  • Yoghurt, for serving


  1. Pre-heat oven to 180°C fan-forced.
  2. Place rhubarb, sugar, water, peel and bay leaves in a small baking dish. Toss well. Cover with foil and bake for 15 mins.
  3. Add berries to baking dish, gently toss to combine and return to the oven for a further 5 mins uncovered. Serve warm with yoghurt or chilled on your morning cereal.
