Deliciously soft banana bread with a chocolate swirl because we all know banana and chocolate are best served together.
Ingredients
- 3 ripe mashed banana
- 1/4 cup CSR Smart Sugar
- 2 eggs at room temperature
- 1/4 cup almond milk
- 1/4 cup melted butter or oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups (approximately 210-215g) flour, can swap 50g of flour for protein
- 50g of chocolate or choc spread
Method
- Preheat the oven to 175C
- Mash your bananas. Add CSR Smart Sugar and whisk until glossy. Whisk eggs, vanilla, milk and melted butter or oil
- Sift in flours, protein if using, salt and baking powders. Mix until it's just combined. Reserve 1 cup of batter
- In a separate bowl melt your chocolate until smooth. Mix reserved cup of batter into the chocolate or choc spread until combined. If the colour is too light you can add a Tbs of cocoa powder
- Line a loaf tin. Dollop the regular batter, followed by the chocolate batter repeating this process until all batter has been used up. Run a knife or spatula through to swirl the batter. Bake for 45-55 mins until a skewer inserted into the center comes out pretty clean. Let cool for 10 minutes, then turn transfer to a wire rack to cool completely before slicing (the bread will continue to cook slightly as it cools)
