Blueberry White Choc Banana Bread

A twist on the classic banana bread with delicious seasonal blueberries and white chocolate. All made lighter with Monk Fruit Classic Blend, try this ligther version today! 


  • 2 ripened bananas
  • 80g yogurt
  • 1 egg
  • 20g butter
  • 60-80ml almond milk
  • 1 tsp vanilla essence
  • 200g White Wings all-purpose flour
  • 60g CSR Monk Fruit Classic
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 150g fresh blueberries
  • 50g sugar-free white chocolate


  1. Pre-heat oven to 180C or 350F
  2. Melt butter and mix all wet ingredients until well combined
  3. Sift through dry ingredients and mix with a spatula until well combined
  4. Dust blueberries in 1/2 tsp of flour and mix into the batter (reserve some for the top)
  5. Chop chocolate and mix into the batter (reserve some for the top)
  6. Add to a lined loaf pan and bake for 45-50 minutes
  7. Let cool down completely before cutting into 10-12 slices
