Blueberry White Choc Banana Bread

A twist on the classic banana bread with delicious seasonal blueberries and white chocolate. All made lighter with CSR Smart Sugar, try this ligther version today!
Ingredients
- 2 ripened bananas
- 80g yogurt
- 1 egg
- 20g butter
- 60-80ml almond milk
- 1 tsp vanilla essence
- 200g White Wings all-purpose flour
- 30g CSR Smart Sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 150g fresh blueberries
- 50g sugar-free white chocolate
Method
- Pre-heat oven to 180C or 350F
- Melt butter and mix all wet ingredients until well combined
- Sift through dry ingredients and mix with a spatula until well combined
- Dust blueberries in 1/2 tsp of flour and mix into the batter (reserve some for the top)
- Chop chocolate and mix into the batter (reserve some for the top)
- Add to a lined loaf pan and bake for 45-50 minutes
- Let cool down completely before cutting into 10-12 slices
