Anna Banana

Anna Banana is a BANGING banana bread.
It smells great and the sweet spread of crunchy honeycomb gives it that melting moment.
Ingredients
- 85g unsalted butter, softened
- 1 cup (220g) CSR Caster Sugar
- 1 tsp vanilla bean paste
- 1 egg
- 4 medium-sized ripe bananas, mashed
- 1½ cups (225g) White Wings Plain Flour
- 1 tsp baking powder
- 100g chocolate-coated honeycomb
- 200g unsalted butter, softened, extra
Method
- Preheat oven to 180°C/160°C fan-forced. Grease a 13cm x 23cm, 7cm deep loaf tin; line with baking paper.
- Beat butter, sugar and vanilla in a medium bowl with an electric mixer fitted with a paddle attachment until pale and fluffy.
- Add egg, then banana and beat until just combined.
- Fold in combined sifted flour and baking powder. Stir until combined. Spoon mixture into prepared tin.
- Bake for 55 minutes, turning tin halfway through cooking time, or until a skewer inserted into the centre comes out clean. Leave in tin for 10 minutes before transferring to a wire rack to cool.
- Meanwhile, to make crunchy honeycomb butter, finely chop 50g of the honeycomb; roughly chop the remainder. Fold finely chopped honeycomb through extra butter in a small bowl. Sprinkle roughly chopped honeycomb on top.
- Serve banana bread with crunchy honeycomb butter.
KIDS’ TIPS : Make the loaf and place it in the freezer as a whole loaf, or cut slices and individually wrap them. Get creative with the mixture and make muffins or even a large round cake.
