Ingredients
- 185g butter spread
- ¾ cup CSR Low GI Sugar
- 3 extra large eggs
- 1 large zucchini, finely grated
- 1 very ripe banana, mashed
- 1½ cups White Wings self-raising flour
- ¼ cup rolled oats
- 1 tsp cinnamon
- ¼ cup pepitas
Method
- Pre-heat oven to 180°C (160°C fan-forced). Line a 10 x 20cm loaf pan with baking paper.
- Using an electric mixer, beat butter and sugar together until creamy. Add eggs one at a time until well incorporated. Add zucchini and banana, mixing well.
- Fold in flour, oats and cinnamon. Pour into prepared pan, sprinkle the top with pepitas and bake for 1 hour 15 mins or until an inserted skewer comes out clean. Allow to cool.
