Ingredients

  • 185g butter spread
  • ¾ cup CSR Low GI Sugar
  • 3 extra large eggs
  • 1 large zucchini, finely grated
  • 1 very ripe banana, mashed
  • 1½ cups White Wings self-raising flour
  • ¼ cup rolled oats
  • 1 tsp cinnamon
  • ¼ cup pepitas

Method

  1. Pre-heat oven to 180°C (160°C fan-forced). Line a 10 x 20cm loaf pan with baking paper.
  2. Using an electric mixer, beat butter and sugar together until creamy. Add eggs one at a time until well incorporated. Add zucchini and banana, mixing well.
  3. Fold in flour, oats and cinnamon. Pour into prepared pan, sprinkle the top with pepitas and bake for 1 hour 15 mins or until an inserted skewer comes out clean. Allow to cool.
