Yakitori Chicken

Yakitori Chicken is a traditional Japanese dish. Unlike many Asian dishes, Yakitori Chicken isn’t spicy which makes it a delicious dinner for the whole family. Cook the Yakitori Chicken skewers on the BBQ in summertime or inside on the grill in winter.
Ingredients
- 12 wooden skewers, soaked in water
- ½ cup soy sauce
- ¼ cup mirin
- ¼ cup sake or sherry
- 2 tbsp CSR Dark Brown Sugar
- 1kg chicken thigh fillets
- 6 spring onions, cut into 4cm pieces
- Rice and cucumber salad, for serving
Method
- Combine soy, mirin, sake and sugar in a small saucepan and simmer for 5 mins. Remove from heat and chill. Reserve 2 tablespoons and chill separately.
- Cut thigh fillets into 4cm cubes and add to the chilled soy mixture. Return to refrigerator and marinate for at least 30 mins.
- Thread chicken pieces onto skewers with spring onions. Cook in a pre-heated pan or grill for several minutes each side, brushing with a little of the marinade whilst cooking.
- Heat the reserved 2 tablespoons of marinade and serve with the cooked chicken. Accompany with rice and cucumber.
