Yakitori Chicken

Yakitori Chicken is a traditional Japanese dish. Unlike many Asian dishes, Yakitori Chicken isn’t spicy which makes it a delicious dinner for the whole family. Cook the Yakitori Chicken skewers on the BBQ in summertime or inside on the grill in winter.

Ingredients

  • 12 wooden skewers, soaked in water
  • ½ cup soy sauce
  • ¼ cup mirin
  • ¼ cup sake or sherry
  • 2 tbsp CSR Dark Brown Sugar
  • 1kg chicken thigh fillets
  • 6 spring onions, cut into 4cm pieces
  • Rice and cucumber salad, for serving

Method

  1. Combine soy, mirin, sake and sugar in a small saucepan and simmer for 5 mins. Remove from heat and chill. Reserve 2 tablespoons and chill separately.
  2. Cut thigh fillets into 4cm cubes and add to the chilled soy mixture. Return to refrigerator and marinate for at least 30 mins.
  3. Thread chicken pieces onto skewers with spring onions. Cook in a pre-heated pan or grill for several minutes each side, brushing with a little of the marinade whilst cooking.
  4. Heat the reserved 2 tablespoons of marinade and serve with the cooked chicken. Accompany with rice and cucumber.
