Thai Pork Skewers

Made with Dark Brown Sugar, Thai Pork Skewers are a great balance of sweet and savoury flavour. This thai-style dish is a great BBQ or dinner recipe so as the saying goes “get some pork on your fork” and try it today.
Ingredients
- 700g Pork Scotch fillet, 2cm dice
- 3 tbsp CSR Dark Brown Sugar
- 1 tbsp garlic, minced
- 3 tbsp coriander roots and stems, very finely chopped
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
- 2 tbsp coconut cream
- 12 bamboo skewers, soaked in cold water
Method
- Grind the garlic and coriander to a paste in a mortar and pestle.
- In a large bowl, place cubed pork, CSR Dark Brown Sugar, garlic coriander paste, fish sauce, soy sauce, and oil. Mix until well coated, cover with cling film and refrigerate for at least 2 hours or overnight.
- Skewer 5-6 pieces of pork on each bamboo skewer.
- Heat a non stick fry pan over high heat, until just starting to smoke.
- Once the pan is hot, add skewers and cook for 2-3 mins each side until all sides are nicely charred and pork is firm.
- Remove from grill and let rest for 1-2 mins before serving.
