  • ½ cup coconut sugar 

  • ¼ cup water 

  • 1 cup smooth peanut butter 

  • 1 tbsp vanilla extract 

  • ⅓ cup melted coconut oil 

  • Pinch of salt, to garnish


  1. Place coconut sugar and water in a saucepan, place on medium heat for 5-6 minutes until sugar is dissolved and the syrup is slightly thickened. 

  2. Add peanut butter, vanilla, melted coconut oil and sugar syrup to a food processor or high-speed blender and pulse until smooth and creamy. 

  3. Pour into a lined loaf tin, sprinkle a little salt on top and place in the freezer to set for 2-4 hours. 

  4. Slice and serve directly from the freezer.
