No Bake Lemon Slice

No-bake lemon slice is perfect for packed lunches. Make this tonight and you’ll have enough for everyone to have a special treat for the rest of week.

 

 

 

Ingredients

Slice:

  • 250g sweet biscuits
  • 1 cup desiccated coconut
  • ½ can condensed milk
  • 80g butter, melted
  • 1 tsp finely grated lemon rind

Icing:

  • 2 cups CSR Soft Icing Mixture, sifted
  • 40g butter, melted
  • 2 tbsp lemon juice

Method

  1. Line a 17 x 26cm slice tray with baking paper.
  2. Place biscuits into the bowl of a food processor and pulse until coarse crumbs have formed. Remove to a large mixing bowl and add the coconut, condensed milk, butter and lemon rind. Mixing until well combined.
  3. Press into prepared tray pressing down firmly. Refrigerate until set.
  4. For the icing, combine icing sugar mixture, butter and lemon juice together in a mixing bowl until smooth. Spread over cooled lemon slice and refrigerate covered until required. Optional: top with shredded coconut.

 

Tip:

Wrap up in cellophane and tie with a pretty ribbon for a lovely home-made gift!
