Marble Rainbow Cake

Make you next kid’s party colourful with a Marble Rainbow Cake. With just a drop of colour, you can turn any plain vanilla cake into a Marble Rainbow Cake. Coat it with vanilla buttercream icing or top with chocolate ganache and sprinkles.
Ingredients
- 250g butter, diced and softened
- 1 cup CSR Caster Sugar
- 3 extra large eggs
- 2 tsp vanilla extract
- 2 cups White Wings self-raising flour
- ⅓ cup milk
- Red Food Colouring
- Blue Food Colouring
- Yellow Food Colouring
Method
- Pre-heat oven to 180°C. Line a 22cm round cake tin.
- Place butter and sugar into the bowl of an electric mixer. Beat until pale creamy. Add eggs one at a time until well incorporated. Add vanilla, mixing well.
- Add flour and milk alternately until well combined and batter is smooth.
- Divide batter into 3 separate bowls adding a few drops of food colouring to make a batch of each colour.
- Using a spoon, dollop one coloured batter into the cake tin in three separate spoonfuls. Repeat with the other two colours. Using a figure 8 pattern, gently swirl the colours using a bread knife.
- Bake for 55 mins, or until an inserted skewer comes out clean. Cool in tin for 10 mins before removing to a cooling rack.
