Low GI Sugar Rum Balls

Our naughty but very nice Low GI Rum Balls are a quick & easy adult treat. They also make a delicious homemade gift so create a batch of these Low GI Rum Balls for someone special this week.
Ingredients
- 60g sponge finger biscuits
- 2 tbs dark rum
- ½ cup dried apricots
- 2 tbs cocoa powder, sifted
- 2 tbs CSR Low GI Sugar
- ½ cup desiccated coconut
- 1 tbs extra desiccated coconut, for rolling
- 1 tbs extra cocoa powder, for rolling
Method
- Crumble the sponge finger biscuits into a small bowl. Drizzle over the rum and mix until well combined. Set aside for 15 mins.
- Put the sponge mixture, apricots, cocoa powder, sugar and coconut in a small food processor. Cover and process until well combined and mixture comes together.
- Use clean hands to shape heaped teaspoonfuls of the mixture into balls. Roll half the balls lightly in coconut and cocoa powder.
