Nothing quite gets you into the festive season like buttery Christmas Shortbread. Cut yours out in stars, trees or angels to get in the Christmas spirit.
- Preheat the oven to 150°C. Grease a flat baking tray.
- Beat butter & icing sugar until creamy. Mix in cornflour and flour until combined.
- On a floured surface, roll out dough to 1 cm thick and cut into Christmas shapes with a cookie cutter.
- Carefully place biscuits on the prepared oven tray and prick with a fork. Bake for 25-30 mins, until shortbread is pale but crisp. Cool on a wire rack then dust with remaining icing sugar.
