Chocolate Self Saucing Pudding

This luscious Chocolate Self Saucing Pudding is just the thing for a cold winter’s evening. A guaranteed bowl-licking favourite, you can have this Chocolate Self Saucing Pudding ready on the table in just over one hour.
Ingredients
Pudding
- 1 cup (150g) White Wings self-raising flour
- 2 tbs baking cocoa
- ½ cup (115g) CSR Brown Sugar
- 80g butter, melted and cooled
- ½ cup (125ml) milk
- 1 large egg, lightly beaten
- 50g dark chocolate, roughly chopped
- 1 tbs CSR Soft Icing Mixture, to serve
Sauce
- ¾ cup CSR Brown Sugar
- 2 tbs baking cocoa, sifted
- 1¼ cups boiling water
Method
- Preheat oven to 160º fan-forced. Grease a 5 cup capacity ovenproof dish.
- Sift flour and cocoa into a large bowl. Stir in CSR Brown Sugar.
- Whisk butter, milk and egg in a jug. Add to flour mixture with dark chocolate and mix until combined. Spoon into dish.
- To prepare the sauce, Combine CSR Brown Sugar and cocoa then sprinkle over pudding.
- Pour boiling water over the back of a large metal spoon to cover pudding. This avoids large indentations in the pudding.
- Place dish onto a baking tray. Bake for 50-60 mins or until pudding bounces back when pressed gently in centre. Rest for 15 mins and sprinkle with CSR Soft Icing Mixture to finish.
