Caramelised Red Onion Bacon Tart

This impressive caramelised red onion bacon tart tastes as good as it looks and is oven ready on just 15 min. Perfect for easy entertaining!

Ingredients
- 4 rashers rindless lean bacon, cut into 2cm slices
- 1 tbs fresh thyme leaves or 2 tsp dry thyme
- 1½ cups mature cheddar cheese, grated
- 3 tbs ricotta cheese
- 1 egg, lightly beaten
- sea salt and freshly ground pepper
- 8 sheets Pampas filo pastry
- 50g butter, melted
- ½ cup caramelised red onion relish
- 1 tbs parsley, chopped
Method
- Preheat oven to 180°C and line a large baking tray with a silicon sheet or baking paper.
- In a small bowl, mix together the ricotta, ½ cup of the grated cheese, ½ the thyme and the egg, mix well and season generously with sea salt and black pepper.
- Working quickly, lay 1 sheet of filo pastry on the lined tray. Brush all over with melted butter. Then lay another sheet on top and again brush with butter. Repeat with the remaining sheets of filo. Brush again with melted butter.
- In a long wide oval, in middle of the buttered filo pastry, spread the ricotta-egg mix evenly. Scatter generously with remaining grated cheese, thyme leaves and bacon slices.
- Roll the edges of the pastry all around the filling to form a raised border. Brush the borders with the remaining butter.
- Bake for 10 min at 180°C, then reduce the heat to 160°C, cover the tart with a sheet of baking paper and bake for a further 10 min or until the filo pastry and cheese is light golden brown.
- Dollop all over with the caramelised red onion relish and bake for a further 2-3 minutes or until golden brown. Serve warm sprinkled with chopped parsley.
