Bananas 4 Choc Granola

An ideal crunch to have for breakfast with milk or yoghurt, as a snack, or as a topping for ice-cream.

Ingredients

  • 3 cups (270g) rolled oats
  • 1/2 cup (40g) shredded coconut
  • 11/4 cups (100g) dried banana chips
  • 4 cups (80g) puffed rice, toasted 
  • 50g dark chocolate, finely chopped
  • 1/2 cup (50g) cocoa powder
  • ½ cup (110g) firmly packed CSR Brown Sugar
  • ¾ cup (270g) honey

Method

  1. Preheat oven to 160°C/140°C fan-forced. Grease a large baking tray; line with baking paper.
  2. Combine rolled oats, coconut, banana chips, puffed rice, chocolate and cocoa powder in a large heatproof bowl.
  3. Bring sugar and honey to the boil in a small saucepan over low heat. Stir until sugar dissolves.
  4. Carefully pour sugar mixture over the dry ingredients and stir to coat.
  5. Spread half the mixture onto prepared tray. Reserve remaining granola for Bananas 4 Choc Granola Bars (see recipe to right).
  6. Bake for 25 minutes, stirring occasionally to break into clumps. Cool completely on tray. Granola will crisp up and harden on cooling.
  7. Store granola in an airtight container for up to 3 weeks.
KIDS’ TIP: You can also add additional ingredients to the granola, such as dried fruit and nuts.
