Baked Coffee Donuts

Baking donuts is a great alternative (and less messy) to deep frying. We give you permission to indulge with our Baked Coffee Donuts dripping in gooey chocolate.
Ingredients
Donuts:
- 1 cup milk
- ⅔ cup CSR Coffee Sugar Crystals
- 125g butter
- 2 tsp instant coffee
- 2 cups White Wings Plain Flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 2 extra large eggs, lightly beaten
Chocolate Glaze:
- ½ cup cream
- 1 tbsp CSR Brown Sugar
- 100g dark chocolate, chopped
Method
- Pre-heat oven to 160°C fan-forced. Lightly oil 12 donut holes.
- Place milk, coffee crystals, butter and coffee into a saucepan and heat, stirring regularly until sugar has dissolved and butter has melted. Set aside to cool.
- Combine flour, baking powder and cinnamon in a large mixing bowl. Add cooled milk mixture and eggs. Whisk together until smooth.
- Spoon mixture between donut holes and bake for 10 mins until golden. Transfer to a cooling rack.
- For chocolate glaze; heat cream and sugar until hot and sugar has dissolved. Pour over the chocolate, mixing until smooth and chocolate has melted. Allow to cool slightly.
- Dip donuts into the chocolate glaze and turn up on a wire rack allowing excess glaze to drip off. Sprinkle with additional coffee crystals when glaze is slightly set.
