Apple Crumble

Get messy and dig into this golden Apple Cumble.
To make this, you'll need a 22cm (9-inch) ovenproof frying pan however see tips below if you don't have one on hand.
Ingredients
- 4 medium apples (600g), peeled, cored, sliced thickly
- ¼ cup (60ml) water
- 1 tsp grated fresh ginger
- 1 tsp grated lemon rind
- 30g (1 ounce) reduced-fat spread
- 2 tbsp White Wings Wholemeal Plain Flour
- 1 tsp ground cinnamon
- 2 tbsp rolled oats
- 1 tbsp CSR White Sugar
- ¼ cup (20g) flaked almonds
- 1 tsp CSR Soft Icing Sugar Mixture
- 4 x 50g (1½-ounce) scoops no-added-sugar vanilla ice-cream
Method
- Preheat oven to 200°C/400°F.
- Place apple, the water, ginger and rind in the ovenproof frying pan. Cook, covered, over medium heat, for 5 minutes or until apple is just tender. Remove from heat.
- Meanwhile, rub spread into flour and cinnamon in a small bowl. Stir in oats, sugar and nuts. Sprinkle crumble mixture over fruit in pan.
- Bake for 25 minutes or until golden. Dust with sifted icing sugar; serve with ice cream.
TIPS: If you don’t have a suitable frying pan, the apple can be cooked in a medium saucepan, then the mixture transferred to an ovenproof dish. Sprinkle with crumble then bake as above. Leftover crumble can be stored in the refrigerator for up to 3 days.
